The whole world is a little bit obsessed with guac. I feel like I’ve heard the popular adage “guac is extra” about a million times this year. My theory is that the popularity of avocado toast spawned the popularity of guac (or is it the other way around?) and we’ve been payin’ extra ever since.
This particular guac is a little different then our average. That’s because this guac has pickles! This should come as no surprise to you, dear reader, since 80% of my recipes alone use pickles. Call us crazy (like, that’s TOTALLY fair) but I actually think pickles are a stellar addition to guac.
Their salty crunch adds a pleasant texture that guac can sometimes lack. With the inclusion of garlic, red onion, red pepper flakes, and a healthy splash of pickle juice (it takes the place of lime juice) this guac is jam packed with flavor. Suffice to say, this guac is the good kind of extra.
