Ingredients
- 3 tbsp. corn oil
- 325 g. frozen sweetcorn kernels
- 2 eggs, beaten
- 100 g. plain flour
- 1 tsp. baking powder
- 1 spring onion, finely chopped
- 1 red chilli, finely chopped
- 10 g. coriander, chopped
For the salsa
- 1 avocado
- 2 salad tomatoes, finely diced
- 1 red pepper, deseeded and diced
- half lime, juiced
- 4 tbsp. corn oil
- Salt and pepper, to taste
Directions
- Set the corn oil to one side and combine all of the fritter ingredients in a large bowl – mix thoroughly until thick.
- Warm a large frying pan with the oil.
- Drop dessert spoonfuls of the fritter mixture into the warm oil with enough space in between to turn them.
- Cook for two minutes each side on a medium heat until golden brown and crispy.
- Combine all of the salsa ingredients in a bowl and mix well.
- Serve the hot fritters with a side bowl of salsa and eat immediately.
