ingredients
3 tablespoons more-virgin olive oil
1 massive onion, chopped
2 carrots, peeled and chopped
2 ribs celery, chopped
1 pound cremini mushrooms, trimmed and sliced
eight ounces shiitake mushrooms, stems eliminated, caps sliced
three sprigs fresh rosemary
1 cup farro
Kosher salt and freshly floor black pepper
half cup chopped hazelnuts
half-1 teaspoon red wine vinegar
preparation
1. In a massive pot, heat 2 Tbsp. oil over medium warmness. upload onion, carrots and celery and cook dinner, stirring once in a while, till onion is translucent, 8 to 10 minutes. add mushrooms, rosemary, and farro; cook dinner, stirring, till mushrooms begin to launch their liquid and reduce in volume,approximately 6 minutes. upload 6 cups water, three/four tsp. salt and half tsp. pepper. cowl and produce to a boil. lessen heat to medium-low, partially find pot and simmer until farro is tender,approximately 1 hour.
2. while soup simmers, preheat over to 350°F. arrange hazelnuts on a big rimmed baking sheet and bake, shaking pan once in a while, till they flip a shade darker and end up aromatic, 8 to 10 mins.
three. cast off rosemary from soup; stir in vinegar. taste and season with salt and pepper. Divide soupamongst four bowls, pinnacle with nuts and ultimate 1 Tbsp. oil and serve.
