White Bean Stew with Herbed Yogurt

1 head garlic, cut in half crosswise, papery pores and skin eliminated
1/2 bunch parsley, stems and leaves chopped one after the other
1 pound dried gigante or lima beans, soaked in a single day in water and drained
2 tablespoons greater-virgin olive oil
1 tablespoon honey
1/4 teaspoon purple pepper flakes
1 medium onion, peeled and reduce into wedges with root stop intact
1 medium bulb fennel (approximately 12 oz..), cored and reduce into 1/2-inch wedges
1 lemon, sliced crosswise 1/four inch thick
Kosher salt and freshly ground black pepper
1/four cup undeniable entire Greek yogurt
2 tablespoons chopped sparkling oregano leaves

1. Preheat oven to 350°F. Wrap garlic and parsley stems in cheesecloth; tie into a small pouch with kitchencord. In a big pot, cowl beans with water through 1 inch. upload cheesecloth pouch, oil, honey, and redpepper flakes. place onion, fennel, and lemon slices over pinnacle of beans. carry soup to a boil over medium heat; cowl and switch to oven.

Stir in 2 Tbsp. parsley leaves; season with salt and pepper. In a bowl, mix yogurt, oregano, 2 Tbsp. parsley leaves and 1/four tsp.each salt and pepper. Divide soup amongst 4 bowls; pinnacle every with a dollop of yogurt combinationand serve.
