2 1-lb. bunches huge asparagus spears
1 cup frozen shelled edamame, thawed
1 cup frozen or sparkling English peas
1/2 cup extra-virgin olive oil
1/4 cup slivered almonds, gently toasted
2 cloves garlic
1 1/2 teaspoon lemon zest
1 cup loosely packed clean basil leaves
half cup loosely packed fresh mint leaves
1/four cup loosely packed fresh tarragon leaves
2 tablespoons fresh lemon juice
2 oz. shaved Manchego cheese
instruction
1. convey 6 cups water to a boil in a huge pot; upload 1 tablespoon salt. Have geared up a bowl of ice water.
2. Trim hard ends from asparagus. cut 1 bunch diagonally into 2-inch pieces. Shave stalks of closingasparagus with a vegetable peeler. add diagonally reduce asparagus, edamame and peas to boiling water;cook dinner for 4 minutes. Plunge greens into ice water to stop the cooking technique; drain well.
3. manner oil, almonds, garlic and lemon zest in a blender until clean. upload herbs and manner till easy.
four. region dressing, shaved asparagus, cooked asparagus aggregate, lemon juice and half teaspoon salt in a bowl; toss to coat. pinnacle with Manchego.
